#Fantastic book! Delicious bread! (2008-11-07) I just tried the basic recipe for Boule in the book and it is DELICIOUS! It came out with a perfect crust and texture. It is such a no brainer to make and can be made in no time. If you haven t got the book yet, run to the store, it is a well-worth investment. It will cost you almost next to nothing to make really good bread. Make sure however you use organic flour as it makes a big difference in the quality of bread you will get. Also, I strongly recommend you get a pizza stone and a pizza peel before starting to make your first bread...
#I love to cook and now I love to bake (2008-05-19) I am a confident cook, I love cooking for friends and family. However my baking skills were much to be desired. Desserts were easier for me to handle but baking bread I wouldn t attempt without a bread machine. Well this book arrived on a Wed. Thurs I was reading through it. Friday I made the master recipe (1st recipe in book), the boule. Saturday shaped my first dough ball into baguettes. They turned out great! I made two baguettes to fit my baking stone and both were eaten quickly. Sunday I pulled out some dough and ma...
#Makes homemade bread easy! (2008-02-21) I ve been trying to bake bread at home with pretty poor results until now. I have tried recipes from several books and websites, but I couldn t quite get the technique right. The instructions in this book make baking bread as easy as baking muffins. There is no kneading or punching-down, just mix the ingredients, let it sit for a few hours, then refrigerate until you are ready to bake. When it s time for a fresh loaf of bread, pull out a hunk of dough, shape it (takes less than a minute), let it sit for a short period of time and then bake. ...

#This Book Is All You Really Need! (2006-09-22) This book is the best thing since sliced bread! After searching high and low for a decent book on gluten free bread, I stumbled across this book and haven t looked back since. There are so many great receipes that are extremely easy to follow. You can t go wrong even if you are just a beginner. It also has receipes for egg free, lactose free, yeast free and many other allergy free variations. This book is really all you need. The bread is a thousand times better than any gluten free bread that you can buy in the stores. Maybe the man...
#GFG Bakes Bread is Great! (2003-08-05) My children and I were diagnosed with food allergies 1 1/2 yrs ago. I tried quite a few food allergy cookbooks. The results ranged from tolerable to absolutely gross. I wasn t sure if there were any decent recipes out there for wheat, dairy and egg allergies. There are. Ms. Hagnman is absolutely wonderful. Her recipes make our food life much more enjoyable. We especially enjoy her hamburger bun recipe. Anyone out there looking for easy and delicious allergy recipes, this is the place.
#too time-consuming! (2003-02-23) I checked out a copy of the book from the library before buying it. After making 3 of the recipes, including some that she says are her regular breads, I found them too time-consuming for the outcome. Roben Ryberg s breads are much simpler for the small difference in taste. If you have the time, though, go for it!
#Thank God for Betty!! (2003-01-17) If you are diagnosed with Celiac Disease Betty Hageman s books are a MUST BUY!! She is a plethora of information and great recipes!! The best part is she speaks from experience.
#Great Glutten-free book for dummies (2002-09-02) If you have a wheat intolerance this is the book to get. And if you have never made bread, this is the book to get. It explains every step with straight forward instructions. . . . Happy baking!

#Great Collection of Recipes (2008-07-01) I love this bread book. I had an older bread machine recipe book and just couldn t replicate the texture and flavour of bakery / store bread until I tried the recipes in this book. Hardly any of the recipes rise too high where it touches the lid which was a problem with my other bread machine recipe book. The recipes work without adjustment in my Black and Decker bread machine. There is a great variety of recipes and I can t wait to try them all.

A bread baker, like any true artisan or craftsman, must have the power to control outcomes, says Peter Reinhart, author of The Bread Baker s Apprentice. Mastery comes with practice. As in many arts, you must know and understand the rules before you can break them. Reinhart encourages you to learn the science of bread making, but to never forget that vision and experimentation, not formulas, make transcendent loaves. The Bread Baker s Apprentice is broken into three sections. The first is an amusing tale of Reinhart s visit to France and his discovery of pain à l ancienne, a cold-fermented baguette. The second section comprises a tutorial of bread-making basics and Reinhart s Twelve Stages of Bread. And finally, the recipes: Ciabatta, Pane Siciliano, Potato Rosemary Bread, New York Deli Rye, Kaiser Rolls, and Brioche, to name a few. All recipes include bread profiles and ingredient percentages. Reimagined for modern bakers, these mouthwatering classic recipes are bound to inspire. --Da...

#If you love good bread, this is worth every penny and more (2004-07-15) This book is a real education in bread baking. You ll learn the science behind the process, as another reviewer stated, you ll feel like you are sitting in one of the author s classes at Johnson & Wales University. You ll learn various dough-shaping techniques, including tips that I otherwise would never have known, like how to create surface tension so that the loaf will rise up and not just out. Basically, you will learn everything you need to know to create really great bread and you ll learn it in an enga...
#This is the way! (2004-04-24) I have purchased this book and have no experience in baking, go figure. But I have successfully baked breads that 99% of homemaker bakers dont even know is possible. What an eye opening experience, and the little bit of science of bread baking is extremely interesting. There are a few books out there that are the real deal and this is one of them. Sadly so many books printed are garbage written by wanna be yahoos. This book is a gem. nuff said.
#If you love to bake then you knead this book (2004-02-17) If you are out there searching for a bread book like i was, take my advice and buy this book. It is a well written collection of Peter Reinhart s recipes, but also of his experiences. As you read this book you will find that you feel as though you are sitting in one of his classes at JWU. These recipes are clear and concise and the steps that lead up to it allow you to produce exactly what he says you will. Also checkout the back of this book to see other great books that he recommends. I must go purchase a second copy...
#just too long to make. . . (2004-02-13) I want to state my point asap: these breads take to long to make, up to 2 days, and some even longer. My grandmother could have made a dozen breads in that amount of time. I understand perfectly well that these recepies are proffesional baker s ",formulas",, but it s not meant for the ordinary home baker (unless you re rich with a very big and proffesional kitchen). I was tricked into buying this book because i trust the reviews from other people to tell me what s inside a book and common complaints, yet no one mentioned these things...
#A fully accessable professional text (2004-02-05) Simply the best. Chef Reinhart explains the process of bread baking in intricate, complete and understandable detail. Fully accessable to both the amatuer and the professional. As a professional baker I can t help but hope it remains a well kept secret.
